My Vegan/gluten free version of Carrabba's Tagliarini Picchi Pacchiu for Meatless Monday
Super Simple Recipe
Serving size 8
1 pack of Tinkyada Brown Rice spiral pasta
5 cloves of organic fresh garlic chopped or sliced
12 Roma tomatoes cut/diced
5-7 pieces of fresh organic basil leaves roughly chopped
2 ounces Extra virgin olive oil
Salt and pepper to taste
Vegan mozzarella shreds to top
Cook pasta according to package directions
Meanwhile, simmer garlic in olive oil over low heat for 6-8 minutes
Add remaining ingredients (except cheese) and stir over medium heat for 3-5 minutes
Toss spiral pasta in with sauce mixture and top with vegan mozzarella shreds.
Serve with breadsticks or garlic bread
