Meatless Monday Meal

Black Bean and Corn Burritos with Cilantro Brown Rice 1 can of black beans ½ can of canned corn 1.5 cup vegan mozzarella or Mexican shredded cheese 1 cup cooked brown rice (Optional) ½ red bell pepper, chopped ½ purple/red onion, chopped ¼ cup fresh cilantro, chopped 1 tablespoon butter 1 teaspoon oil 1 teaspoon salt 1 teaspoon black pepper 1 teaspoons cumin Splash of half a lime 8 medium flour tortillas INSTRUCTIONS Heat a large skillet to medium heat, add the bell peppers, onion, beans, corn, cilantro, butter, juice of the lime, and spices, saute for 2-4 minutes on high. Remove from heat and set aside. To make the wraps, Lay tortilla flat on plate or counter, add ¼ cup of the bean mixture, 2 tablespoons rice, 2-3 tablespoons cheese. Be sure to leave about 2-3 inches from the corners. Wrap burrito by folding over the edges. Continue this for all 8 burritos. After the burritos are wrapped heat a large skillet or pan, add 1 teaspoon oil, place the burritos on the skillet for 1-2 minutes on each side until they are golden and crispy. For the "ridges" use a griddle that has the ridged lines. Serve warm with sour cream or salsa.

Meatless Monday

I thoroughly enjoyed my teriyaki veggie burger, seasoned sweet potato fries and a huge bottle of alkaline water for lunch 

Meatless Monday has really been fun for me; throughout my life I've never been a heavy "meat eater", today my diet fluctuates between 80% Pescitarian and 20% vegetarian and on occasion, vegan. One day I'll make a full commitment but until then, this is my story and I'm sticking to it.

Of course there are some benefits that I enjoy and of course want to share them with you guys.


  • - cutting out meat just once a week can drastically decrease your risk for heart disease by up to 19%
  • - decrease your risk of cancer 
  • - it's a great health conscious way to start your week
  • - consuming less calories 
  • - you'll feel accomplished and healthier
  • - you'll save a few dollars

What a beautiful little surprise

I was out and about on yesterday at the lake enjoying the lovely and unpredictable December Georgia weather and decided to take a selfie. I took a few more, trying to get a better shot, I actually thought that the sun was glaring or my camera lens needed to be cleaned; I looked a little closer and realized that my aura was shining in the first photograph I took...

So, what is an aura and how do you get it? Those were a couple of the questions I pondered when I first started learning about energy, reiki and chakras, so I thought I'd address them for anyone else who may be curious or wondering the same thing. 

First off, everyone has an aura, its not something for selected individuals 

Google Definition
AURA- a supposed emanation surrounding the body of a living creature, viewed by mystics, spiritualists, and some practitioners of complementary medicine as the essence of the individual, and allegedly discernible by people with special sensibilities.

Text Book Definition
AURA- Metamolecular space around a plant, animal or human body or a haze that surrounds the human body. It has also been described as a very subtle form of matter or a vital force that radiates and lies at the base of all manifested life.

Below is an aura color chart. There are a lot more colors but this is a pretty simple and straight forward chart for beginners. 

I'd say my photograph was definitely on track with the aura color chart.

Meatless Monday

My Vegan/gluten free version of Carrabba's Tagliarini Picchi Pacchiu for Meatless Monday

Super Simple Recipe
Serving size 8
1 pack of Tinkyada Brown Rice spiral pasta
5 cloves of organic fresh garlic chopped or sliced
12 Roma tomatoes cut/diced
5-7 pieces of fresh organic basil leaves roughly chopped 
2 ounces Extra virgin olive oil
Salt and pepper to taste
Vegan mozzarella shreds to top 

Cook pasta according to package directions

Meanwhile, simmer garlic in olive oil over low heat for 6-8 minutes 

Add remaining ingredients (except cheese) and stir over medium heat for 3-5 minutes

Toss spiral pasta in with sauce mixture and top with vegan mozzarella shreds. 

Serve with breadsticks or garlic bread

Operation Curve Appeal Begins

20-15 was the warm up, game time in 20-16!

What a difference a year can make... Operation Curve Appeal is the Mind,body and spirit connection. 

I took my before pic Labor Day 2014. I went to my OBGYN earlier that week and was informed that I weighed 172 pounds (the largest I've ever been), we discussed the fact that I've never been hospitalized (besides child birth), great blood pressure and glycemic and then she mentioned I had 3 small fibroid tumors growing inside of my uterus... She said it so nonchalantly that it pissed me off, she also mentioned that over 85% of African American women over the age of 35 develop fibroid tumors and suggested that I schedule an appointment to have them removed. I declined... 

So, what I learned after I got home was...
a) although I was/am a pretty health conscious individual, you still have to be aware of what's going on with and inside your body. I use doctors for their technology and equipment 

b) food choices, herbs, meditation and fitness are game changers when it comes to shifting and maintaining good health

c) that I was going to heal myself and transform my body

Well that's exactly what I've done, actually in about 7 months I've released 14 pounds and my fibroid tumors are GONE, did you hear me GONE...

I'm in pure bliss right now!

I'm in pure bliss...being able to watch my vision come to life and become the woman God called me to be has been a priceless journey. I have wanted to quit and give up numerous times but during my quite time the whisper wouldn't allow me to turn back...

 I've always had an intense desire to help other people, (particularly women) to be their best version of themselves and live successful, balanced lives filled with good health, love and laughter; the one thing I didn't know is that I would have to become that in which I desired to help others be, do and have; in other words I had to get my own ish together first lol. And now, here I am five years later... I'm honored that God chose me and thankful to have the opportunity to serve women around the world. 

So, my question to you is what's in your heart? What's the one thing that won't let you rest in the middle of the night?  What are you going to do about it? Don't wait until next year, don't procrastinate any longer, take baby steps if you have to.
